Learner: NC Professional Cookery – T (Eastern Cape)

In the heart of the Eastern Cape, where cultural diversity is complemented by a burgeoning food culture, students working towards the National Certificate in Professional Cookery (NQF Level 4) are making their passion into professional art. One such student is Thandiwe M., a determined and passionate student from Mthatha, who is quickly becoming a star in her field.

What is the NC Professional Cookery Certificate?
National Certificate in Professional Cookery is a comprehensive course that seeks to equip prospective chefs with the fundamentals of knowledge, skills, and attitudes necessary to achieve success in the hospitality and food service industry. Quality Council for Trades and Occupations (QCTO)-endorsed, the course blends theory and hands-on experience in real commercial kitchens.

Found throughout South Africa, including the Eastern Cape, this qualification has the potential to lead to a career in restaurants, hotels, catering companies, and cruise liners—or the ultimate dream of being one’s own culinary business.

A Taste of the Eastern Cape: Local Flavors Meet Global Techniques
Thandiwe and her peers look at classic culinary techniques—e.g., French knife skills, sauce making, and kitchen practices—along with respecting indigenous South African cuisine. Dishes like umngqusho (samp and beans) and chakalaka are being given a modern spin.

“The training is demanding but inspiring,” Thandiwe explains. “We don’t merely learn to cook—we learn to design.”
Aside from culinary skills, students are also educated in food costing, kitchen sanitation, menu planning, and stock control—all important for anyone who wants to move up the ranks in a commercial kitchen or begin their own business.

Not only are graduates employable; they’re set to leave their mark in the tourism and hospitality industries that form the backbone of economic growth in the Eastern Cape.
